Salted Chocolate Tahini Cookies

Updated: Mar 16, 2021

If you have never used tahini in baking before, I highly recommend it! Tahini has a slightly nutty and earthy flavour that pairs really well with the sweetness of the maple syrup and nutty flavour of the tiger nut flour. Add chocolate and salt and you have a simple cookie with complex and enjoyable flavours.

Like I have mentioned in a previous post, tiger nut flour is grain-free, gluten-free, vegan and paleo. These cookies are for EVERYONE! It can be difficult to find a treat that caters to most dietary restrictions all-in-one, but I think this checks all the boxes and is a tasty and safe cookie for all! Since this recipe requires a cookie cutter, it opens the door to creativity by catering to different cookie cutter shapes for holidays or parties!

Salted Chocolate Tahini Cookies

Ingredients:

  • 1 cup of tiger nut flour

  • 1/4 cup of maple syrup

  • 1/4 cup of tahini

  • 1 teaspoon of vanilla

  • 1/8 teaspoon of salt

  • Chocolate Chunks

  • Flake salt

  • Sprinkles (optional)

Instructions:

1. Preheat oven to 350°F.

2. Add all ingredients to one bowl and mix until everything is thoroughly combined.

3. On a clean surface, roll out the batter evenly to ensure a consistent thickness for even baking.

4. Use a cookie cutter of choice. Transfer cookies to a cookie sheet lined with parchment paper, giving each cookie at least one inch of room.

5. Add chocolate chunks, flake salt and sprinkles on top prior to baking.

6. Bake for 8 to 9 minutes or until golden brown.

7. Let cool completely and enjoy!
