Green Superfood Cookies

It can often be difficult to get enough healthy greens into our daily diet, so why not throw some of that green power into a cookie!?


This cookie has a light green colour to it due to the green powder. Does this cookie taste like grass? If grass tasted like this, there would be no grass left on our lawns because we would eat it all! Yes, you can taste some of that super green powder, but the peanut butter and maple syrup cut the possible bitterness of the powder with a light sweetness. Get a bite with a white chocolate chip in it and it just gets even better.


You will love this cookie because it is a guilt-free treat that packs nutrition and satisfaction, so go ahead and have another one!


Green Superfood Cookies


Ingredients:

  • 1/2 cup of peanut butter

  • 1/2 cup of maple syrup

  • 1/2 teaspoon of vanilla

  • 1 tablespoon of plant-based milk

  • 1 cup + 1/3 cup of oat flour

  • 1 teaspoon of baking powder

  • 2 scoops of Nested Naturals Super Greens Powder

  • 1/2 teaspoon of cinnamon

  • 1/3 cup of white chocolate chips



Instructions:


1. Preheat oven to 350°F.


2. Mix peanut butter, maple syrup, vanilla and milk in mixing bowl until well combined.


3. Add dry ingredients and combine well.


4. Fold in the white chocolate chips.


5. Roll into golf ball sized balls and place on cookie sheet giving at least one inch of space.


6. Flatten balls with a spatula until roughly 1/4 inch thick.


7. Bake for 10 minutes.




You could use any superfood powder you like, but for this recipe, I used Nested Naturals Super Greens Powder, found below.
