Golden Flax Muffins

You will love these muffins because they are simple to make and contain clean, nutritious ingredients. This is a versatile muffin that is perfect for breakfast or an afternoon snack.


Many muffins, especially those purchased at a bakery or grocery store, are overly large in size, high in refined sugar, unhealthy fats and are basically a cupcake without the icing. This isn't always a bad thing, but when fuelling up for the day, the more nutritious, the better!


This recipe is packed with omega-3’s from the ground flax and is rich in monounsaturated fat from the almond flour which may help in reducing cholesterol.


These muffins will hit the spot with their subtle sweetness and nuttiness, leaving you feeling nourished and satisfied!


Golden Flax Muffins


Ingredients:

  • 2 eggs

  • 1/2 cup of dairy free milk

  • 1 teaspoon of vanilla

  • 1/3 cup of coconut sugar

  • 3 tablespoons of granulated sugar

  • 1/4 cup of grapeseed oil

  • 1/2 cup of milled and roasted flax

  • 1/2 cup of almond flour

  • 3/4 cup of spelt flour

  • 1 tablespoon of baking powder

  • 2 teaspoons of cinnamon

  • 1/4 teaspoon of nutmeg

  • 1/2 teaspoon of salt


Instructions:


1. Preheat oven to 350°F. Grease a muffin pan and set aside.


2. Whisk the eggs then add the milk, vanilla, sugars and oil until well combined.


3. Add the dry ingredients and whisk until combined.


4. Divide batter evenly between 12 muffin cups, filling each cup ¾ full.


5. Bake for 15 minutes until golden brown and a clean toothpick comes out.



Delicious on their own, or serve warm with vegan butter or chia seed jam.
