Giant Miso Cookies

If you love sweet & salty, these cookies are for you! Cookies are such a fun thing to bake because there are endless ingredients to experiment and create any flavour or texture profile possible! What is Miso, you ask? Miso has been used since the eighth century and is a fermented paste made from soybeans, a grain, salt and koji. It can be chunky or smooth and there are more than 1,000 types of miso! Miso adds a salty flavour to many Japanese dishes and can be found in the refrigeration section in most grocery stores. Miso is typically used in savoury recipes such as salad dressings, stir fry’s or sauces, but I have taken a sweeter approach, with a Miso Cookie.


You will love these cookies because they have quite a complex flavour combining the miso, nut butter, butter, and chocolate. They are the perfect amount of salty and sweet.


Giant Miso Cookies

Ingredients:

  • 1 1/4 cups of spelt flour

  • 1/2 teaspoon of baking soda

  • 10 tablespoons of vegan butter

  • 1 cup of coconut sugar

  • 1 flax egg

  • 1/3 cup of almond butter

  • 1/4 cup of miso (smooth)

  • 1 teaspoon of vanilla

  • Melted chocolate for drizzling

  • Sesame seeds to decorate



Instructions:


1. Preheat oven to 350°F.


2. Mix wet ingredients. Add dry ingredients and combine thoroughly.


3. Roll dough into balls 1.5 tablespoon big. Flatten down slightly using a spatula. Give each cookie at least 2 inches of room.


4. Bake 10-12 minutes until golden brown.


5. Let cookies cool completely before drizzling melted chocolate on top. Decorate with sesame seeds. Let the chocolate set on the cookie in the fridge.
