Creamy Green Pea Soup

There isn’t anything much cozier than a warm bowl of homemade soup. Although soup is the perfect meal for cooler days, soup is perfect all year round because of how nutrient dense it is, filling and versatile it can be.
This Green Pea Soup is bright, fresh, fragrant and creamy. By adding herbs of your choice, you can achieve the desired flavours you like. The coconut milk and pureed peas create a perfectly creamy consistency that makes you question if it is in fact dairy-free.
You will love this recipe because life is busy and time is limited. It is pantry friendly, economical and requires zero prep other than chopping up an onion.
Green Pea Soup
Ingredients:
5 cups of frozen peas
1 onion, diced
1 can of coconut milk
1 carton of vegetable broth
Minced garlic
Herbs of choice
Instructions:

1. Chop up onion and garlic. Sauté onion and garlic in the pot with a tablespoon of olive oil until onion becomes translucent.
2. Add the frozen peas, coconut milk, vegetable broth and herbs.
3. Bring to a boil and let simmer for 15 minutes.
4. Remove from heat.

5. Using a hand blender, blend until completely smooth and serve immediately.
