Cinnamon-Sugar Pull Apart Bread

This is the ultimate brunch centrepiece! Add this to your brunch spread and it will be a hit with all of your friends and family. Although it bakes as one piece, there is something very satisfying about pulling the soft, warm and gooey pieces off this loaf as they detach so easily and effortlessly. Have I mentioned how incredible your home will smell while this is baking?

I am a huge fan of cinnamon rolls, but don’t often make them as they are quite time consuming and have many steps involved. This Cinnamon-Sugar Pull Apart Bread is the perfect treat to satisfy that cinnamon roll craving, but with half the amount of time and work. If you really want to imitate a cinnamon roll, make a side of icing to add on top.
Cinnamon-Sugar Pull Apart Bread
Ingredients:
2 and ¼ cups of whole wheat flour
3 teaspoons of Fleischmann’s Bread Booster
¼ cup of cane sugar
2 and ¼ teaspoons of Fleischmann’s Quick Rise Yeast
1 teaspoon of salt
¾ cup of plant-based milk (I used Oat Canada)
¼ cup of water
¼ cup of vegan butter (I used Melt)
1 egg
Filling:
1 cup of cane sugar
1 tablespoon of ground cinnamon
½ cup of vegan butter, melted
Instructions:
1. In a medium bowl, mix flour and Bread Booster together.
2. Using a stand mixer, combine the flour mixture with the sugar, dry yeast and salt.
3. Combine milk, water and butter in a small bowl and microwave for around 20 seconds until warm, but not hot. The butter won’t be melted all the way and this is OK. Add this mixture along with the egg to the flour mixture.
4. Using a stand mixer, beat for two minutes at medium speed, scraping the bowl occasionally. Continue combining until the dough forms into a ball.
5. Knead on a lightly floured surface until smooth and elastic. The dough should spring back when lightly pressed with two fingers. Cover with a towel and let rest for 15 minutes.
6. For the filling, combine the sugar and cinnamon in a shallow bowl. Melt the butter in a separate bowl.
7. Cut the dough into multiple pieces. Depending on what pan you use, you may cut the pieces smaller or larger (approximately 10-15 pieces).

8. Grease your pan thoroughly.
9. Dip each piece into the melted butter and then roll in the cinnamon sugar mixture. Place each piece in the pan and repeat until all pieces are coated and placed in the pan. Make sure the pieces are evenly distributed throughout pan to ensure even baking.
10. Cover with a towel and let it rise in a warm place until doubled in size, about 35 minutes.
11. Bake in preheated 375°F oven for 25 minutes or until rolls are golden brown.
12. Let it cool for 5 minutes in the pan, then remove it from the pan onto a serving plate to finish cooling (that is, if you can wait that long!).
