Chocolate Chunk Quinoa Cookies

These cookies are the ultimate sweet and salty treat. The quinoa flour adds a earthy and nutty flavour while providing moisture and density. These earthy flavours pair well with the sweetness of the chocolate and salty finish. Quinoa flour is naturally gluten-free, which makes it the perfect cookie for sharing with your friends and neighbours.
Although quinoa flour has quite a bold flavour, using quinoa flour in your recipes can add protein, fibre and iron; upping the nutritional value of your treat. Anytime you can add more nutrition and natural fuel in a sweet treat, the better! This recipe is also a one-bowl recipe which makes it a quick and easy weeknight bake - no mess, no fuss.
Chocolate Chunk Quinoa Cookies
Ingredients:
1 cup of quinoa flour
1/2 teaspoon of baking soda
1/8 teaspoon of salt
1/2 cup of coconut sugar
1 flax egg (1 tablespoon of ground flax + 3 tablespoons of water)
1/2 teaspoon of vanilla
1/3 cup of melted coconut oil
2 tablespoons of plant based milk
1/4 cup of chocolate chips
Chocolate chunks from your favourite dairy-free chocolate bar!
Flake salt

Instructions:
1. Preheat oven to 350°F.
2. Make flax egg, set aside.
3. Mix dry ingredients until well combined. Add the wet ingredients one at a time until well combined.
4. Shape into balls and flatten with a fork or spatula until roughly 1/4 inch thick.
5. Add a chunk of chocolate to the top of the cookie and finish off with flake salt.
6. Bake for 10 minutes or until brown.
