Blueberry Cheesecake Bites

Life is all about balance! As I'm sure you can tell if you have taken a quick look around my blog, I love a tasty treat! Treats don’t always have to be this thing we avoid because they are “unhealthy”. Sure, sometimes they are, but sometimes they aren’t and recognizing the difference can be rewarding. These mini blueberry cheesecakes are well balanced with healthy fats (almonds, coconut oil), antioxidants (blueberries), inflammation fighter (cacao powder), magnesium and fibre (cashews).

You will love this recipe as it is pantry friendly, packs flavour, nutrition and for it's minimal ingredient list. This recipe can be modified by using any frozen fruit of your choice. I would also consider it a one-bowl recipe as you only require your food-processor - the less mess, the better!

Blueberry Cheesecake Bites

Ingredients:

Crust:

• 1.5 cups of almond flour

• 2 tablespoons of cocoa or cacao powder

• 2 tablespoons of maple syrup

• 1/2 cup of melted coconut oil

Filling:

• 1/2 package of Fauxmagerie Zengarry Double Creme Brie style cashew cheese

• 1 cup of frozen fruit - I used blueberries

Instructions:

1. Make the crust by adding all of the crust ingredients to a food processor and mix until well blended.

2. Divide evenly and press down into a pan, muffin tin, or fun shape! Freeze while preparing the filling.

3. To make the filling, add the cashew cheese and frozen fruit to the food processor and process until smooth.

4. Divide evenly on top of the crust layers.

5. Let set in the freezer for at least an hour.

6. Let cheesecake thaw for 15 minutes before serving. Enjoy!
