Beetroot Powder Overnight Oats


Mornings can often be hectic, forcing us to grab food that is processed, lacking protein and leaving our brains and bellies only a quarter full. Overnight oats can be a great way to get a healthy breakfast in the morning with little effort.


Overnight oats are simple, easy, economical and healthy. Even better, they can be prepped the night before or even earlier! Overnight oats generally last 5 days in the refrigerator, so if you want to prep all of your overnight oats for the week, go for it!


On the go? Simply add your toppings to the mason jar before leaving the house in the morning and it will be ready whenever you are!


I love the beautiful, rich colour of beetroot powder! Not only does it add a bright colour to your morning oats, it may also provide increased energy, fight inflammation, help with digestive health and is high in nutrients, but low in calories.


Beetroot Powder Overnight Oats

(recipe serves one - triple or quadruple the recipe in separate jars to meal prep for the week)


Ingredients:


Base:

  • 1 cup of quick oats

  • 2/3 cup of oat milk

  • 1 tablespoon of maple syrup

  • 2 teaspoons of beetroot powder

  • 1/4 teaspoon of vanilla extract

Toppings:

  • 1 tablespoon of hemp hearts

  • 1 large dollop of plant-based yogourt

  • 1/4 cup of defrosted dark cherries (including the juices)

Instructions:


1. Add the oats, milk, maple syrup, beetroot powder and vanilla to a mason jar and stir thoroughly with a spoon until well combined.


2. Seal the mason jar and store in the fridge overnight.


3. In the morning, transfer oatmeal to a bowl and add the hemp hearts, yogourt and cherries. On the go? Add the toppings to the mason jar in the morning and eat them when you are ready!
